Matcha green tea and flakey coconut combine inside a snappy dark chocolate shell to create an easy sweet vegan + paleo treat with just 6 ingredients!

Inspired by the ever so delicious Matcha Boom Bars from a company called Nanuki that I discovered while visiting Cape Town (that sadly don’t ship to the US *insert sobbing emoji here*), these chocolate covered matcha bars are the perfect not too sweet but still decadent way to eat matcha for dessert.
Matcha and coconut combine to create the gorgeous green inside, and then we hide all of that inside a silky dark chocolate coating. If you’ve never tried matcha with chocolate I highly recommend. And I highly recommend you start with THESE bars.
I can’t claim my homemade version is AS good as Nanuki, but they are pretty damn delish!

Description
Matcha green tea and flakey coconut combine inside a snappy dark chocolate shell to create an easy sweet vegan + paleo treat with just 6 ingredients!
Ingredients
- 2 cups (140g) unsweetened shredded coconut
- 1/4 cup (50g) coconut oil
- 1/4 cup (80g) maple syrup or honey
- 1 tsp matcha powder (my favorite is Encha)
- Pinch of salt
- 1 cup (180g) dark chocolate chips
Instructions
- In a food processor combine everything except the chocolate. Process until sticky.
- Press into a pan lined with wax paper (mine was 8×4″). Freeze for 2 hours until hard.
- Cut into 8 bars (or smaller!)
- Melt the chocolate chips. Coat each bar in chocolate. Refrigerate until set.
- Enjoy!
